Instructions

1- Preheat Oven:

  • Preheat your oven to 325ยฐF (160ยฐC).

2- Prepare Vegetables:

  • Place celery, carrots, onions, and garlic in a food processor.
  • Pulse until finely minced.

3- Cook Vegetables:

  • In a large oven-safe pot or Dutch oven, heat olive oil and butter over medium-high heat.
  • Add minced vegetables, season with 1/2 teaspoon salt and black pepper.
  • Cook for 6-8 minutes until soft and translucent.

4- Add Tomato Paste:

  • Stir in the tomato paste and cook for 5 minutes until slightly darkened.

5- Brown the Beef:

  • Add the ground beef chuck to the pot.
  • Break it up with a wooden spoon and cook until browned, about 8-10 minutes.

6- Build the Sauce:

  • Pour in the chicken stock and crushed tomatoes.
  • Add oregano, chili flakes, 1/2 tablespoon salt, and 1/2 teaspoon black pepper.
  • Stir well.

7- Bake in Oven:

  • Bring the sauce to a boil.
  • Cover with a lid and place in the preheated oven.
  • Bake for 1 hour and 35 minutes, stirring halfway through.

8- Finish Bolognese:

  • Remove pot from oven.
  • Stir in the heavy cream and Parmesan cheese.
  • Return covered pot to oven for 45 minutes to an hour, stirring once halfway through.

9- Cook Pasta:

  • Meanwhile, boil Mezzi Rigatoni according to package instructions.
  • Drain well.

10- Combine and Serve:

  • Toss the rigatoni with the rich Bolognese sauce.
  • Serve warm, garnished with extra Parmesan and fresh parsley.
