Ingredients

🥔 3 to 4 large potatoes
🧂 1/2 tablespoon salt (for boiling potatoes)
🧅 1 small red onion
🌶️ 1 red bell pepper
🌿 A handful of fresh dill (as much as you like)
🌿 A handful of fresh parsley (as much as you like)
🫒 1/3 cup extra virgin olive oil
🍋 1 tablespoon lemon zest
🍋 Juice of one lemon
🥄 1 tablespoon stone ground mustard (optional)
🧂 1 teaspoon salt
🧄 1/2 teaspoon garlic powder
⚫ 1/2 teaspoon black pepper


Instructions

1- Prepare Potatoes:

  • Peel and wash the potatoes. Dice them into large cubes.
  • Place the diced potatoes in a pot. Cover with cold water and add 1/2 tablespoon of salt.
  • Bring to a boil and cook until the potatoes are fork-tender, approximately 15-20 minutes.

2- Prepare Vegetables:

  • While the potatoes are boiling, finely chop the red onion, red bell pepper, dill, and parsley. Set aside.

3- Make the Vinaigrette:

  • In a large mixing bowl, combine the extra virgin olive oil, lemon zest, lemon juice, stone ground mustard, 1 teaspoon of salt, garlic powder, and black pepper.
  • Whisk until the ingredients are well combined to form a smooth vinaigrette.

4- Assemble the Salad:

  • Once the potatoes are cooked, drain them thoroughly.
  • While still warm, add the potatoes to the prepared vinaigrette, allowing them to soak up the flavors.
  • Add the chopped red onion, bell pepper, parsley, and dill to the bowl.
