Instructions
1- Melt Butter and SautΓ© Vegetables:
- In a large Dutch oven or pot, melt 4 tablespoons of unsalted butter over medium heat.
- Add the diced onion, carrots, and celery, sautΓ©ing for about 5 minutes until they are softened.
2- Add Aromatics and Spices:
- Stir in the minced garlic, chicken bouillon powder, black pepper, paprika, and garlic powder.
- Cook for an additional minute, allowing the flavors to meld.
3- Incorporate Flour:
- Sprinkle the flour over the sautΓ©ed vegetables.
- Stir continuously for about 2 minutes, until the flour turns a light golden color, forming a roux.
4- Add Stock and Simmer:
- Gradually pour in the Best Choice Organic Chicken Stock, stirring to prevent lumps.
- Add the fresh thyme and shredded rotisserie chicken, and bring the mixture to a gentle boil with the lid on.
5- Incorporate Dairy and Gnocchi:
- Stir in the heavy cream, milk, and package of potato gnocchi.
- Continue to cook for 5β10 minutes, stirring often, until the gnocchi is cooked through and floats to the top, and the soup starts to thicken.
6- Finish with Cheese and Spinach:
