Atayef Asafiri are delightful Middle Eastern pancakes traditionally enjoyed during Ramadan and festive occasions. This unique variation features a slightly sweeter batter, beautifully complemented by a luscious kishta (cream) filling. Perfectly bite-sized and irresistibly delicious, they make an elegant dessert or a delightful treat at any time.

Ingredients

For the Batter
🍞 2 cups flour
🍚 1/2 cup semolina (Ψ³Ω…ΩŠΨ― Ω†Ψ§ΨΉΩ…)
🍬 4 tablespoons sugar

🍞 1/2 teaspoon yeast

For the Kishta Filling

Instructions

1- Prepare the Batter:

  • In a mixing bowl, combine the flour, semolina, sugar, baking powder, and yeast.
  • Gradually whisk in the warm water and warm milk until you have a smooth batter.
  • Cover the bowl with plastic wrap and let the batter rest for 20 minutes. This allows the yeast to activate and create a fluffy texture.

2- Cook the Atayef:

  • Heat a non-stick skillet over medium heat.
  • Pour a small amount of batter onto the skillet to form a pancake about 3 inches in diameter.
  • Cook the atayef on one side only until bubbles form on the surface and the bottom is golden brown. Do not flip it.
  • Once cooked, remove from heat and place on a clean towel. Continue with the remaining batter.

3- Prepare the Kishta Filling:

  • In a large bowl, combine the heavy cream, Nestle table cream, and sweetened condensed milk.
  • Whip the mixture until stiff peaks form, ensuring a thick and creamy consistency.

4- Assemble the Atayef Asafiri:

  • Take one cooked pancake and pinch it into a cone or half-moon shape, sealing the edges halfway.
  • Spoon the kishta filling into the open side of the atayef.
  • Optionally, sprinkle with crushed pistachios or a drizzle of honey for extra flavor.
