Avocado toast is a brunch favorite that’s simple yet satisfying. This version is loaded with flavor thanks to buttery toasted bread, a creamy avocado-cilantro mash, juicy cherry tomatoes, and a perfectly fried egg with a runny yolk to bring it all together.
Ingredients
🥑 1 ripe avocado
🍋 1 tsp lemon juice
🌿 1 tbsp chopped fresh cilantro
🧂 Salt, to taste
🧂 Black pepper, to taste
🍞 1 thick slice of bread
🧈 1 tbsp butter (for toasting)
🍳 1 large egg
🍅 3–4 cherry tomatoes, halved

Instructions
1- Mash the Avocado:
• In a bowl, mash the avocado.
• Mix in lemon juice, chopped cilantro, salt, and black pepper.
• Set aside while preparing the toast.
2- Toast the Bread:
• Heat a skillet over medium heat.
• Butter both sides of the bread and toast until golden brown on each side.
• Remove from pan and place on a serving plate.
3- Fry the Egg:
• In the same skillet, crack the egg and cook to your preferred doneness.
• For a runny yolk, fry until whites are set but yolk is still soft.
• Season with salt and pepper.
4- Assemble the Toast:
• Spread the mashed avocado mixture evenly over the toasted bread.
• Top with halved cherry tomatoes.
5- Add the Egg:
• Place the fried egg gently on top of the tomatoes.
• Finish with a pinch of black pepper.
6- Serve Immediately:
• Enjoy while the egg is still warm and yolk is soft and runny.
