Bruschetta is a timeless Italian appetizer that brings together the freshness of ripe tomatoes, the creamy texture of mozzarella, and the bold flavors of basil and garlic. This easy recipe is perfect for summer gatherings or as a simple yet elegant starter before any meal.

Ingredients

🥖 1 loaf of baguette or Country French bread
🫒 2 tablespoons olive oil for the bread
🍅 1 large tomato
🌿 A handful of fresh basil
🧄 1 clove of garlic
🍋 Juice of 1 lemon
🧂 1/2 teaspoon salt
🧀 8 oz Pearl mozzarella
🫒 1/4 cup extra virgin olive oil
🍇 Balsamic glaze (for drizzling on top)

Instructions

1- Prepare the Bread:

  • Preheat your oven to 375°F (190°C).
  • Cut the loaf of bread into thin slices.
  • Brush both sides of each slice with olive oil.
  • Arrange the slices on a baking sheet and place them in the oven.
  • Toast until crispy and golden brown, about 10 minutes.

2- Prepare the Topping:

  • Dice the tomato into small pieces, chop the basil finely, and mince the garlic.
  • In a medium bowl, combine the tomato, basil, and garlic.
  • Squeeze the juice of one lemon over the mixture, add the salt, and gently fold in the Pearl mozzarella.
  • Pour in the extra virgin olive oil and mix all ingredients well to combine.

3- Assemble the Bruschetta:

  • Once the bread is toasted, remove it from the oven.
  • Top each slice with a generous amount of the tomato-mozzarella mixture.
  • Just before serving, drizzle balsamic glaze over each bruschetta for that perfect finishing touch.

4- Serve and Enjoy:

  • Arrange on a serving platter and enjoy immediately, experiencing the blend of flavors and textures.
