Ingredients
🍗 4 boneless, skinless chicken thighs, cubed
🍆 1 eggplant, cubed
🥔 3 potatoes, cubed
🧅 1 large onion, sliced
🧄 3 cloves of garlic, minced
🌶️ 1 jalapeño, sliced
🌶️ 3 small bell peppers, any color, sliced
🧂 1 tablespoon of adobo
🍅 1 tablespoon of tomato bouillon
🌿 1 teaspoon of garlic powder
🧄 1 teaspoon of onion powder
🌶️ 1 teaspoon of paprika
🧂 1/2 teaspoon of black pepper
🌿 1/2 teaspoon of cumin
🍊 1 packet of Sazón
🫒 3 tablespoons of oil
🍅 1 8oz can of tomato sauce
💧 2 cups of hot water
🌿 Parsley or cilantro, for garnish
🌶️ Jalapeño slices, for garnish
Instructions
1- Preparation:
- Cube the chicken thighs and eggplant. Cube the potatoes and slice the onion, jalapeño, and bell peppers.
2- Season the Chicken:
- In a bowl, combine the chicken with adobo, garlic powder, onion powder, paprika, black pepper, cumin, and the packet of Sazón. Mix well.
3- Cook the Aromatics:
Heat oil in a large skillet over medium heat.
Add the minced garlic and sliced onion. Sauté for about 2 minutes until fragrant.
4- Cook the Chicken:
Add the seasoned chicken to the skillet with the garlic and onion.
Cook for about 5-6 minutes until the chicken is lightly browned.
5- Add Vegetables:
Stir in the cubed eggplant, potatoes, sliced bell peppers, and jalapeño.
Mix all the ingredients to distribute flavors evenly.
6- Create the Sauce:
Sprinkle in the tomato bouillon, add the can of tomato sauce, and pour in the hot water.
Stir everything thoroughly and bring to a gentle boil.
7- Simmer:
- Cover the skillet with a lid, reduce the heat to medium-low, and let it simmer until the chicken is fully cooked and the potatoes are fork-tender, around 15-20 minutes.
8- Garnish and Serve:
Once done, garnish with chopped parsley or cilantro and additional jalapeño slices.
