Ingredients

  • 🍗 4 boneless, skinless chicken thighs, cubed

  • 🥔 3 potatoes, cubed
  • 🧅 1 large onion, sliced
  • 🧄 3 cloves of garlic, minced
  • 🌶️ 1 jalapeño, sliced
  • 🌶️ 3 small bell peppers, any color, sliced
  • 🧂 1 tablespoon of adobo
  • 🍅 1 tablespoon of tomato bouillon
  • 🌿 1 teaspoon of garlic powder
  • 🧄 1 teaspoon of onion powder
  • 🌶️ 1 teaspoon of paprika
  • 🧂 1/2 teaspoon of black pepper
  • 🌿 1/2 teaspoon of cumin
  • 🍊 1 packet of Sazón
  • 🫒 3 tablespoons of oil
  • 🍅 1 8oz can of tomato sauce
  • 💧 2 cups of hot water
  • 🌿 Parsley or cilantro, for garnish
  • 🌶️ Jalapeño slices, for garnish

Instructions

1- Preparation:

  • Cube the chicken thighs and eggplant. Cube the potatoes and slice the onion, jalapeño, and bell peppers.

2- Season the Chicken:

  • In a bowl, combine the chicken with adobo, garlic powder, onion powder, paprika, black pepper, cumin, and the packet of Sazón. Mix well.

3- Cook the Aromatics:

  • Heat oil in a large skillet over medium heat.
  • Add the minced garlic and sliced onion. Sauté for about 2 minutes until fragrant.

4- Cook the Chicken:

  • Add the seasoned chicken to the skillet with the garlic and onion.
  • Cook for about 5-6 minutes until the chicken is lightly browned.

5- Add Vegetables:

  • Stir in the cubed eggplant, potatoes, sliced bell peppers, and jalapeño.
  • Mix all the ingredients to distribute flavors evenly.

6- Create the Sauce:

  • Sprinkle in the tomato bouillon, add the can of tomato sauce, and pour in the hot water.
  • Stir everything thoroughly and bring to a gentle boil.

7- Simmer:
