Ingredients
๐ 4 boneless, skinless chicken thighs, cubed
๐ 1 eggplant, cubed
๐ฅ 3 potatoes, cubed

๐ถ๏ธ 1 jalapeรฑo, sliced
๐ถ๏ธ 3 small bell peppers, any color, sliced
๐ง 1 tablespoon of adobo
๐ 1 tablespoon of tomato bouillon
๐ฟ 1 teaspoon of garlic powder
๐ง 1 teaspoon of onion powder
๐ถ๏ธ 1 teaspoon of paprika
๐ง 1/2 teaspoon of black pepper
๐ฟ 1/2 teaspoon of cumin
๐ 1 packet of Sazรณn
๐ซ 3 tablespoons of oil
๐ 1 8oz can of tomato sauce
๐ง 2 cups of hot water
๐ฟ Parsley or cilantro, for garnish
๐ถ๏ธ Jalapeรฑo slices, for garnish
Instructions
1- Preparation:
- Cube the chicken thighs and eggplant. Cube the potatoes and slice the onion, jalapeรฑo, and bell peppers.
2- Season the Chicken:
- In a bowl, combine the chicken with adobo, garlic powder, onion powder, paprika, black pepper, cumin, and the packet of Sazรณn. Mix well.
3- Cook the Aromatics:
Heat oil in a large skillet over medium heat.
Add the minced garlic and sliced onion. Sautรฉ for about 2 minutes until fragrant.
4- Cook the Chicken:
Add the seasoned chicken to the skillet with the garlic and onion.
Cook for about 5-6 minutes until the chicken is lightly browned.
5- Add Vegetables:
Stir in the cubed eggplant, potatoes, sliced bell peppers, and jalapeรฑo.
Mix all the ingredients to distribute flavors evenly.
6- Create the Sauce:
Sprinkle in the tomato bouillon, add the can of tomato sauce, and pour in the hot water.
Stir everything thoroughly and bring to a gentle boil.
7- Simmer:
- Cover the skillet with a lid, reduce the heat to medium-low, and let it simmer until the chicken is fully cooked and the potatoes are fork-tender, around 15-20 minutes.
8- Garnish and Serve:
Once done, garnish with chopped parsley or cilantro and additional jalapeรฑo slices.
