Ingredients

🍗 2 chicken breasts, cut into small strips
🌶️ 1 bell pepper, thinly sliced
🧅 2 onions, thinly sliced
🧀 Shredded cheese (Mozzarella and Cheddar blend)
🌶️ 1 jalapeño, finely chopped
🌿 1 tablespoon of Sazón con todo
🥄 1 tablespoon of chicken bouillon
🌿 1/2 teaspoon of cumin
🌶️ 1/2 teaspoon of red pepper flakes
🌿 1/4 teaspoon of black pepper
🧄 1 teaspoon of garlic powder
🧂 Salt to taste
🫒 2 tablespoons of oil
🌯 Flour tortillas


Instructions

1- Cook the Chicken:

  • Heat a skillet over medium-high heat and add 2 tablespoons of oil.
  • Add the chicken strips to the skillet and cook for approximately 5 minutes, stirring occasionally.

2- Add the Vegetables and Spices:

  • Introduce the bell pepper, onions, and jalapeño to the skillet.
  • Sprinkle in the Sazón con todo, chicken bouillon, cumin, red pepper flakes, black pepper, and garlic powder.
  • Stir to combine and cook for another 5 minutes until the vegetables are tender.

3- Allow to Cool:

  • Remove the skillet from heat and let the chicken mixture cool slightly.

4- Assemble the Taquitos:

  • Preheat your oven to 375°F (190°C).
  • Lay a tortilla flat on a clean surface.
  • Add approximately 3 tablespoons of the chicken mixture onto the tortilla.
  • Sprinkle with a generous amount of shredded cheese.
  • Roll the tortilla tightly around the filling and place it seam side down on a baking tray lined with parchment paper.

5- Bake the Taquitos:

  • Lightly drizzle olive oil over the rolled taquitos.
  • Place the tray in the preheated oven and bake for 15 to 20 minutes, or until the taquitos are golden brown and crispy.

6- Serve:

  • Remove from the oven and let cool slightly before serving.
