Instructions

1- Prepare the Filling:

  • In a large pan over medium-high heat, heat the olive oil. Add the onion and garlic, sautรฉing for about 5 minutes until the onion is soft and translucent.
  • Stir in the shredded chicken and drained Ro-Tel tomatoes. Add the queso and 1 cup of the enchilada sauce. Mix well.
  • Season the mixture with garlic powder, onion powder, chili powder, paprika, cumin, and salt to taste. Stir again and let the flavors meld for about 2 minutes. Set aside.

2- Assembling the Enchiladas:

  • Preheat your oven to 350ยฐF (175ยฐC).
  • Spread 1 cup of the enchilada sauce evenly on the bottom of a baking dish.
  • Fill each tortilla with a portion of the chicken mixture and some shredded cheese. Roll the tortillas tightly and place them seam-side down in the baking dish.
