Chicken Enchiladas are a classic Mexican dish bursting with flavor and comfort. This recipe combines tender shredded chicken, zesty enchilada sauce, and gooey melted cheese to create a dish that will leave you craving more. Ingredients

🌿 1 tablespoon olive oil
🧅 1 onion, finely chopped
🧄 2 cloves garlic, minced
🍗 3 cups shredded cooked chicken
🍅 1 can (10 oz) Ro-Tel tomatoes, drained
🧀 1 cup white or yellow queso
🌶️ 2 cups red enchilada sauce, divided
🧂 1 teaspoon garlic powder
🧂 1 teaspoon onion powder
🌶️ 1 teaspoon chili powder
🌶️ 1 teaspoon paprika
🌿 1 teaspoon cumin
🌯 8 large tortillas
🧀 1 cup shredded cheese (cheddar or Mexican blend)
🧂 Salt to taste


Instructions

1- Prepare the Filling:

  • In a large pan over medium-high heat, heat the olive oil. Add the onion and garlic, sautéing for about 5 minutes until the onion is soft and translucent.
  • Stir in the shredded chicken and drained Ro-Tel tomatoes. Add the queso and 1 cup of the enchilada sauce. Mix well.
  • Season the mixture with garlic powder, onion powder, chili powder, paprika, cumin, and salt to taste. Stir again and let the flavors meld for about 2 minutes. Set aside.

2- Assembling the Enchiladas:

  • Preheat your oven to 350°F (175°C).
  • Spread 1 cup of the enchilada sauce evenly on the bottom of a baking dish.
  • Fill each tortilla with a portion of the chicken mixture and some shredded cheese. Roll the tortillas tightly and place them seam-side down in the baking dish.

3- Baking the Enchiladas:

  • Pour the remaining enchilada sauce evenly over the rolled tortillas. Top with the rest of the shredded cheese.
  • Bake in the preheated oven for 25 to 30 minutes, or until the cheese is melted and bubbly.

4- Serving Your Dish:

  • Once out of the oven, serve the enchiladas immediately. Garnish with your favorite toppings like sour cream, chopped cilantro, or avocado slices. Enjoy!
