Ingredients
For the Stir-Fry:
🐔 2 chicken breasts, cut into bite-sized pieces
🍄 1 cup mushrooms, sliced
🥦 1 cup broccoli (frozen or fresh)
🧄 1 tablespoon garlic paste
🌶️ 1 tablespoon chili garlic sauce
🫚 1 tablespoon ginger paste
🧂 Salt and pepper to taste
🍶 1/4 cup soy sauce
🥄 2 tablespoons oil (for frying)
For the Jasmine Rice:
🍚 4 cups jasmine rice
🧂 1 tablespoon salt
💧 4 cups warm water
🫒 3-4 tablespoons olive oil
Instructions
1- Prepare Ingredients:
- Clean, wash, and cut the chicken into bite-sized pieces.
- Slice the mushrooms and, if using fresh broccoli, cut into florets.
2- Cook Chicken:
- Heat 2 tablespoons of oil in a large skillet over high heat.
- Add the chicken and season with salt and pepper.
- Cook until the chicken is browned and cooked through. Remove chicken from the skillet and set aside.
3- Cook Vegetables:
- In the same skillet, add mushrooms to the remaining oil and sauté for a few minutes until browned.
- Add broccoli and cook for an additional minute.
4- Combine Flavors:
- Return the chicken to the skillet.
- Add garlic paste, chili garlic sauce, ginger paste, and soy sauce.
- Stir well to coat all ingredients with the sauce.
- Cook for a couple more minutes, ensuring everything is well combined and heated through.
5- Finish and Serve:
- Once everything is cooked and combined, turn off the heat.
- Serve hot alongside jasmine rice.
6- For the Jasmine Rice:
- Soak the Rice: Rinse the jasmine rice under cold water and soak it for 15-20 minutes.
- Sauté Rice: Set the pressure cooker to sauté mode. Add olive oil and the soaked rice, lightly sautéing the rice for about a minute.
- Cook Rice: Add 4 cups of water and 1 tablespoon of salt to the pressure cooker. Cancel the sauté mode, cover with the lid, set the valve to pressure, and cook on the rice setting for 15 minutes.
- Release and Fluff: Once done, allow the pressure to naturally release for a few minutes before carefully opening the lid. Fluff the rice with a fork and serve with the stir-fry.
