Delight in the aromatic and succulent flavors of perfectly roasted Cornish hens complemented by spiced yellow basmati rice. This dish combines vibrant spices and tender poultry to create a comforting and satisfying meal perfect for any occasion.
Ingredients
Cornish Hens:
π 3 Cornish hens (or 1 whole chicken)
π§ 1 tablespoon salt
πΆοΈ 1 tablespoon smoked paprika
π 1 tablespoon 7 spice
πΏ 1 tablespoon oregano
π§ 1 tablespoon garlic powder
πΆοΈ 1/2 teaspoon Cayenne pepper
πΏ 1/2 teaspoon turmeric
π₯ 2 tablespoons plain yogurt
π Juice of one lemon
π« 1/3 cup olive oil
Rice:
π 4 cups basmati rice, washed and soaked for 30 minutes
π« 1/3 cup oil
πΏ 1/2 tablespoon 7 spice
πΏ 1 teaspoon turmeric
πΏ 1 teaspoon oregano
π§ 1 teaspoon garlic powder
π§ 1/2 tablespoon salt (or to taste)
π 2 tablespoons chicken bouillon
π§ 4 cups hot water
Instructions
1- Marinate the Cornish Hens:
- In a large bowl, mix together the salt, smoked paprika, 7 spice, oregano, garlic powder, Cayenne pepper, turmeric, yogurt, lemon juice, and olive oil.
- Coat the Cornish hens evenly with this marinade. Cover and let them marinate in the refrigerator for at least 30 minutes, preferably longer for more intense flavors.
2- Roast the Cornish Hens:
- Preheat your oven to 375Β°F (190Β°C).
- Place the marinated hens in a roasting pan.
- Roast in the oven for approximately 1 hour and 45 minutes, or until the juices run clear and the internal temperature reaches 165Β°F (75Β°C).
3- Prepare the Yellow Rice:
- In a large pot, heat the oil over medium heat.
- Once hot, add the soaked rice and stir gently to coat each grain in oil.
- Add the 7 spice, turmeric, oregano, garlic powder, salt, and chicken bouillon. Mix well to combine.
- Pour in the hot water and stir. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and cook for about 15-20 minutes, or until the rice is tender and the water is absorbed.
4- Serve:
- Fluff the rice with a fork and serve alongside the roasted Cornish hens. Enjoy this flavorful and warming dish with your favorite sides or salad.
