Ingredients
🌾 1 cup barley
💧 5 cups water
🥛 2 cups full-fat plain yogurt
🥚 1 egg
💧 4 cups warm water
🥫 1 can chickpeas, drained
🐔 1 tablespoon chicken bouillon
🧂 1 teaspoon salt
🫒 1/3 cup olive oil
🧄 4 cloves minced garlic
🌿 2 tablespoons dried mint
Instructions
1- Prepare the Barley:
- Rinse the barley thoroughly under cold water.
- In a large pot, combine the rinsed barley with 5 cups of water. Bring to a boil, then reduce the heat and simmer for 30 minutes or until the barley is tender.
2- Blend the Yogurt Mixture:
- In a blender, combine the yogurt, egg, and 4 cups of warm water. Blend until the mixture is smooth and well combined.
3- Combine Ingredients:
- Add the yogurt mixture to the pot containing the cooked barley. Stir in the drained chickpeas, chicken bouillon, and salt.
- Keep stirring continuously over medium heat until the mixture comes to a complete boil (this prevents the yogurt from separating). Once it reaches a rolling boil, allow it to cook for an additional 10 minutes.
4- Prepare the Garlic and Mint Sauté:
- In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and dried mint, sautéing for about 2 minutes until fragrant.
5- Finalize the Stew:
- Pour the sautéed garlic and mint over the stew, stirring gently. Reserve some to garnish on top before serving.
- Serve the stew hot, garnished with the remaining sautéed garlic and mint. Enjoy this delicious and wholesome stew!
