Ingredients
🍗 2 chicken breasts
🍶 2 tablespoons soy sauce
🍚 1 tablespoon rice vinegar
🌽 1 tablespoon cornstarch
🛢️ 1 cup oil
🧄 3 cloves garlic, minced
🌿 1 tablespoon ginger, minced
🧅 1 medium onion, sliced
🌶️ 1 red bell pepper, sliced
🌶️ 1 jalapeño, sliced
🍶 1/4 cup soy sauce
🍯 1/4 cup hoisin sauce
Instructions
1- Prepare the Chicken:
- Slice the chicken breasts into thin, bite-sized strips.
- In a large bowl, combine the chicken strips with 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 tablespoon of cornstarch. Mix thoroughly to coat the chicken and allow it to marinate for at least 30 minutes.
2- Prep the Vegetables:
- While the chicken is marinating, chop and slice all the vegetables: garlic, ginger, onion, red bell pepper, and jalapeño.
3- Cook the Chicken:
- Heat the wok or a deep nonstick pan over high heat. Add 1 cup of oil and then the marinated chicken. Stir fry for about 5 to 6 minutes, or until the chicken is cooked through. Remove the chicken from the wok and set aside.
4- Stir Fry the Vegetables:
- Drain excess oil from the wok, leaving about 2 tablespoons. Add the garlic, ginger, onion, red bell pepper, and jalapeño, and stir fry for 2 to 3 minutes, until they begin to soften.
5- Combine and Finish:
- Return the chicken to the wok and pour in 1/4 cup soy sauce and 1/4 cup hoisin sauce. Stir everything together and cook for an additional 1 minute, allowing the flavors to meld.
6- Serve:
- Serve the stir fry hot over a bed of white rice and enjoy!
