Warm and comforting, this Five Cheese Tortellini Soup is a delightful dish perfect for a cozy night in. Packed with fresh vegetables, savory spices, and cheesy tortellini, this hearty soup comes together in no time and is sure to become a family favorite.

Ingredients

🫒 1 tablespoon olive oil
🧈 2 tablespoons unsalted butter
🧅 1 small onion, diced
🥕 2 carrots, peeled and diced
🥬 2 stalks of celery, diced
🧄 2 cloves of garlic, minced
🥒 1 zucchini, diced
🍅 1 14oz can of diced tomatoes
🥫 1 14oz can of red kidney beans, drained and rinsed
🍅 1 28oz can of crushed tomatoes
💧 1 cup of water
🧂 1 tablespoon salt
🌿 1 tablespoon dried basil
🌿 1 teaspoon dried rosemary
🌶️ 1/2 teaspoon red chili flakes
⚫ 1 teaspoon black pepper
🥣 1 32oz carton of chicken or vegetable broth
🧀 4 cups of cheese tortellini
🥬 8oz of spinach


Instructions

1- Sauté the Vegetables:

  • Heat a large pot over medium heat.
  • Add the olive oil and butter. Once the butter has melted, add the diced onion, celery, carrots, and minced garlic.
  • Sauté for about five minutes until the vegetables are soft and fragrant.

2- Add Other Vegetables and Liquids:

  • Incorporate the diced zucchini, diced tomatoes, kidney beans, and crushed tomatoes into the pot.
  • Pour in the cup of water and rinse the crushed tomatoes can with a little water, adding that to the pot as well.

3- Simmer the Soup:

  • Stir in the salt, dried basil, dried rosemary, red chili flakes, and black pepper.
  • Pour in the broth, stirring to combine all the ingredients.
  • Cover the pot and let it simmer for 15 minutes.

4- Cook the Tortellini:

  • After 15 minutes, uncover the pot and add the cheese tortellini.
  • Stir well, then cover the pot again and cook for an additional five minutes, or until the tortellini floats to the top and is cooked through.

5- Finish with Spinach & Serve:

  • Stir in the spinach until wilted.
  • Taste and adjust seasoning if necessary. Serve hot and enjoy.
