Ingredients

๐ฟ 1/2 tablespoon of coriander
๐ฟ 1/2 tablespoon of black pepper
๐ฟ 1/2 tablespoon of thyme
๐ถ๏ธ 1/2 teaspoon of cayenne pepper (or to taste)
Instructions
1- Prepare the Aromatics:
- Grate the large onion and the garlic cloves finely.
- Ensure the flavors are well distributed throughout the meat.
2- Mix the Ingredients:
- In a large mixing bowl, combine the ground beef, grated onion, garlic, plain yogurt, salt, smoked paprika, cumin, coriander, black pepper, thyme, and cayenne pepper.
- Mix the ingredients thoroughly until all spices are evenly incorporated.
3- Shape and Freeze the Meat:
- Divide the meat mixture into two portions.
- Form each portion into a tight log shape.
- Wrap each log in plastic wrap, ensuring there are no air pockets.
- Place the wrapped logs into the freezer until completely frozen, preferably overnight.
4- Slice the Meat:
- Once frozen, remove the logs from the plastic wrap.
- Using a sharp knife, shave thin slices from the logs.
- These slices can be cooked immediately or stored in the freezer for later use.
5- Cook the Kebab:
- Preheat a nonstick skillet over high heat.
- You don't need to add oil as the meat will release its own fats.
- Add the shaved meat slices to the pan and cook until browned and cooked through.
6- Serve:
- Enjoy your homemade doner kebab sliced in sandwiches, with a side of rice, or over bulgur wheat for a delicious meal.
