🍬 1 cup powdered sugar
🌽 2 tablespoons cornstarch
🥚 2 egg yolks
🍦 1 tablespoon vanilla extract
🍇 Raspberry jam (or any preferred jam for filling)
❄️ Extra powdered sugar for dusting

Instructions

1- Cream the Butter and Sugar:

  • In a large mixing bowl, beat the 🧈 butter and 🍬 powdered sugar together until creamy and smooth.

2- Mix the Dough:

  • Add in the 🌽 cornstarch, 🍦 vanilla extract, 🥚 egg yolks, and 🍚 flour.
  • Mix the ingredients until they form a smooth dough.

3- Chill the Dough:

  • Wrap the dough in plastic wrap and refrigerate for about 30 minutes to firm up.

4- Prepare for Baking:

  • Preheat your oven to 350°F (175°C).
  • Line a baking tray with parchment paper.

5- Roll and Cut Dough:

  • Once chilled, roll out the dough on a floured surface to about 1/4-inch thickness.

6- Cut Shapes:

  • Use a cookie cutter to cut out circles from the dough.
  • For half of the circles, use a smaller cutter to cut out the centers, creating a ring.

7- Bake the Cookies:

  • Place the cookies onto the lined baking tray.
  • Gather the scraps together, reroll, and repeat the cutting process until all the dough is used.

8- Cool the Cookies:

  • Bake the cookies for about 10 to 12 minutes, or until the edges are golden.
  • Let the cookies cool completely on a rack.

9- Decorate Cookies:

  • Dust the ring-shaped cookies with extra ❄️ powdered sugar for a decorative finish.

10- Assemble the Sandwich Cookies:
- Spread your choice of 🍇 jam evenly on the flat side of the whole cookies.
- Sandwich them with the ring-shaped cookies, pressing lightly together.
