Grilled Kotalket, also known as Kibbeh Meshwiya, is a delightful take on traditional Middle Eastern cuisine. This aromatic dish combines bulgur wheat with seasoned beef for a flavor-packed experience. Ingredients
For the Shell:
πΎ 1 and 1/2 cups bulgur #1
π 1 and 1/2 pounds of lean ground beef

1 medium-sized onion
π 2 teaspoons of 7 spice
πΆοΈ 1 teaspoon of paprika
π§ 1 tablespoon of salt
For the Filling:
π₯© 3 pounds of ground beef
π§
2 large onions
πΏ Parsley, as much as you desire
π 1 tablespoon of chicken bouillon
π 2 teaspoons of curry powder
β« 1 teaspoon of black pepper
π§ 1 teaspoon of salt
πΏ 1 teaspoon of cumin
Instructions
1- Prepare the Bulgur:
- Rinse the bulgur thoroughly and let it rest for a few minutes to absorb excess water.
- After resting, squeeze out as much liquid as possible using a clean cloth or your hands. Allow it to rest for 10 more minutes.
2- Make the Shell:
- In a large mixing bowl, combine the soaked bulgur, ground beef, finely chopped onion, 7 spice, paprika, and salt.
- Knead the mixture thoroughly until it becomes well combined and sticky.
3- Prepare the Filling:
- In another bowl, mix the ground beef with finely chopped onions, chopped parsley, chicken bouillon, curry powder, black pepper, salt, and cumin.
- Combine well to ensure the flavors are evenly distributed.
4- Form the Kotalket:
- Lightly oil your hands to prevent sticking.
- Take a small fist-sized portion of the shell mixture and roll it into a ball.
- Hollow out the center to create a cavity.
- Fill the cavity with the prepared meat filling and close the opening by pinching the edges together.
- Shape into an oval or round form, as desired. Repeat with the remaining mixture.
5- Grill:
- Preheat your grill to medium-high heat.
- Grill each kotalket for about 10-12 minutes, turning occasionally, until they are golden brown and cooked through.
