Ingredients

For the Dough:
🍞 6 cups all-purpose flour
🫒 2 tablespoons olive oil
🥄 1 tablespoon baking powder
🧂 1 tablespoon salt
💧 3 cups water

For the Broccoli Cheddar Filling:
🥦 1 cup broccoli, chopped
🧅 1 onion, chopped
🧀 1 cup double cheddar cheese, shredded
🥄 1 tablespoon chicken seasoning

For the Spinach and Sumac Filling:
🥬 1 bag fresh spinach
🧅 1 onion, chopped
🍋 1 tablespoon sumac
🥄 1 tablespoon chicken seasoning


Instructions

1- Prepare the Dough:

  • In a large mixing bowl, combine the flour, olive oil, baking powder, and salt. Gradually add water, mixing continuously, until a smooth dough forms.
  • Knead the dough until smooth, cover it with a damp cloth or plastic wrap, and let it rest for about 20 minutes.

2- Prepare the Fillings:

  • Heat some olive oil in two separate skillets over medium heat. Add half of the chopped onion to each skillet.
  • Sauté the onions until translucent.
  • For the broccoli filling, add the chopped broccoli to the skillet with the onion, sauté until tender, then mix in the cheddar cheese and chicken seasoning.
  • For the spinach filling, add the spinach to the other skillet and cook until wilted. Mix in the sumac and chicken seasoning.

3- Form the Flatbreads:

  • Divide the dough into small balls, approximately 1 to 1.5 inches in diameter.
  • Roll each ball into a thin, round flatbread using a rolling pin on a floured surface.
  • Place a generous scoop of your preferred filling in the center of the flatbread, fold the dough over, and pinch the edges to seal.

4- Cook the Flatbreads:

  • Heat a lightly oiled skillet over medium heat.
  • Cook each filled flatbread for 2-3 minutes on each side, or until golden brown and cooked through.
