Ingredients
Dough:

๐พ 1 cup cracked wheat

Filling:

๐ 1 tablespoon chicken seasoning

Red Sauce:
๐ง 2 cloves of garlic, minced

2 tablespoons tomato paste
๐ฅ 1 tablespoon chicken flavoring

White Sauce:
๐ฅฌ 1 bunch collard greens, chopped

1 wax turnip, peeled and cubed
๐ฅ 1 tablespoon chicken flavoring

Instructions
1- Prepare the Dough:
- In a large bowl, combine semolina, cracked wheat, and salt. Add water gradually until a sticky dough forms.
- Cover with plastic wrap and allow to rest for 10-15 minutes.
- Knead the dough until smooth, using moistened hands if necessary. Divide into 1-inch balls.
2- Prepare the Filling:
- In a skillet, brown the ground beef over medium heat.
- Add chopped onion, chicken seasoning, red pepper flakes, salt, black pepper, and curry powder. Sautรฉ until the onions are soft.
- Stir in parsley and remove from heat. Allow the mixture to cool completely.
3- Shape and Fill Kotalks:
- Flatten each dough ball, create a hollow center, and fill with the beef mixture.
- Seal the top and ensure each dumpling is well-shaped.
4- Prepare Red Sauce:
- In a pot, heat some oil and sautรฉ minced garlic until fragrant.
- Stir in tomato paste, chicken seasoning, citric acid, and salt. Add water and bring to a boil.
5- Prepare White Sauce:
- In another pot, heat oil and add collard greens and wax turnip. Sautรฉ until the turnips are softened.
- Add chicken seasoning, citric acid, and salt to taste. Add water and bring to a boil.
6- Cook the Kotalks:
- Add half of the dumplings to the boiling red sauce and the other half to the white sauce.
- Simmer until dumplings are cooked through and flavors meld, about 15-20 minutes.
