Rehiks, also known as shifta, are scrumptious, golden-brown fried cakes combining savory ground beef with a medley of vegetables and spices. Ingredients
🥩 1 pound ground beef
🍅 1 large tomato
🧅 1 medium-sized onion
🌿 1 cup parsley
🌶️ 1 cup sweet bell peppers (any color)
🌶️ 1 jalapeño pepper
🧄 2 cloves garlic
🥄 1 teaspoon cumin
🌶️ 1 teaspoon cayenne pepper
🌶️ 1 teaspoon black pepper
🍂 1 teaspoon allspice
🐔 1 tablespoon chicken bouillon
🧂 1 teaspoon salt
🥄 1 teaspoon baking powder
🥫 1 (6 oz) can tomato paste
🥣 1 to 1½ cups flour
🫒 Oil for frying
Instructions
1- Prepare the Ingredients:
- Wash all vegetables thoroughly.
- Finely chop the tomato, onion, parsley, bell peppers, jalapeño, and garlic.
2- Mix the Ingredients:
- In a large bowl, combine the ground beef with the chopped vegetables.
- Add the tomato paste, baking powder, cumin, cayenne pepper, black pepper, allspice, chicken bouillon, and salt.
- Gradually add flour, starting with 1 cup, and mix well until everything is thoroughly combined. Add an additional ½ cup of flour if the mixture feels too wet. Aim for a consistency that holds together when shaped into patties.
3- Shape the Patties:
- Use your hands to form the mixture into small, flat patties. The flatter, the better, as this ensures even cooking.
4- Fry the Patties:
- Heat a large skillet over medium heat and add enough oil to cover the bottom of the pan.
- Once the oil is hot, add the patties to the skillet. Fry for about 1 to 2 minutes on each side, or until they are a rich golden brown and cooked through.
- Remove the patties from the skillet and let them drain on a paper towel to remove excess oil.
5- Serve:
- Serve immediately as a main dish or as a flavorful addition to sandwiches. Enjoy the delicious fusion of spices and aromatic vegetables in each bite!
