Ingredients

Crust:
🧈 2 sticks of unsalted butter (melted)
🍚 2 and 1/4 cups of flour
🍬 1/2 cup of sugar
🧂 1/4 teaspoon salt
🍦 1 teaspoon vanilla extract

Filling:
🍬 1 and 1/2 cups sugar
🍚 1/4 cup flour
🥚 6 eggs
🍋 1 cup fresh lemon juice
🍋 1 tablespoon lemon zest
🍥 Powdered sugar for dusting (optional)


Instructions

1- Prepare the Crust:

  • Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
  • In a mixing bowl, combine melted butter, sugar, salt, and vanilla extract. Mix well.
  • Gradually add in the flour and continue mixing until a dough forms.
  • Press the dough evenly into the prepared baking pan.
  • Bake the crust for 15 minutes, until lightly golden.

2- Make the Filling:

  • While the crust is baking, whisk together sugar and eggs in a large bowl until well combined.
  • Stir in the fresh lemon juice, flour, and lemon zest. Mix thoroughly to ensure there are no lumps.
  • Once the crust is baked, pour the lemon mixture over the warm crust.

3- Bake the Lemon Bars:

  • Bake the lemon bars at 350°F (175°C) for 30-35 minutes, or until the filling is set and does not jiggle in the center.

4- Cool and Serve:

  • Remove the pan from the oven and allow it to cool completely at room temperature for at least 2-3 hours.
  • Dust the top with powdered sugar before slicing and serving.
