Ingredients

🧀 8 oz tortilla chips
🥩 1 lb ground beef
🌮 1 packet taco seasoning
🌊 1/4 cup water
🥫 1 cup black beans, washed and drained
🧀 1 cup shredded cheese (cheddar or Mexican blend)
🍅 2 medium tomatoes, diced
🥑 2 avocados
🧄 1 clove garlic, minced
🍋 1 lime, juiced
🌿 2 tablespoons cilantro, chopped
🧅 1/4 cup red onion, finely diced
🧂 Salt and pepper to taste
🌶️ 1/4 teaspoon cumin
🌶️ 1/2 teaspoon red chili flakes
🧀 1 cup queso cheese sauce

Instructions

1- Prepare the Ground Beef:

  • In a skillet, crumble and brown the ground beef over medium heat until fully cooked.
  • Drain excess fat. Add taco seasoning and water; let it simmer until the mixture thickens. Add red chili flakes for extra heat. Cook for an additional 3-5 minutes.

2- Prepare the Guacamole:

  • In a bowl, mash avocados. Mix in diced tomatoes, lime juice, minced garlic, cilantro, red onion, salt, pepper, and cumin. Adjust seasoning to taste.

3- Assemble the Nachos:

  • Preheat your oven to 375°F (190°C).
  • Line a cookie sheet with parchment paper. Spread tortilla chips evenly across the sheet.
  • Top with seasoned beef, black beans, and shredded cheese.
  • Place queso in a zip-top bag, cut a corner, and drizzle over the nachos.

4- Bake:

  • Place in the oven and bake for about 10 minutes or until the cheese is melted and bubbly.

5- Add Fresh Toppings:

  • Remove from the oven and immediately top with diced tomatoes and freshly made guacamole.

6- Serve:

  • Serve hot, ideally with sides like salsa, sour cream, or additional guacamole.
