Ingredients

Instructions

1- Prepare the Dough:

  • In a large mixing bowl, combine the flour, cornstarch, oil, yogurt, sugar, and yeast.
  • Gradually add 1/2 cup of water, mixing until well combined and the batter is smooth. If necessary, add the additional 1/3 cup of water to achieve a pourable consistency.
  • Cover the bowl with a damp cloth and let it rest for 20-30 minutes to allow the yeast to activate.

2- Prepare the Simple Syrup:

  • In a medium saucepan, combine the sugar, water, lemon juice, and optional orange blossom water.
  • Bring to a boil over medium heat, then reduce to a simmer and cook for 15-20 minutes, stirring occasionally, until it thickens slightly.
  • Remove from heat and let it cool.

3- Fry the Loqmak:

  • Heat a deep pan with sufficient oil over medium heat for frying.
  • Once the oil is hot, use your fingers to squeeze small portions of the dough through your hand, cutting them with a spoon.
  • Carefully drop them into the oil, frying in batches to avoid overcrowding, until they are golden brown and crisp on all sides.
  • Remove them with a slotted spoon and let them drain briefly on a paper towel.

4- Coat with Syrup:

  • While still hot, immediately dip the fried loqmak into the prepared simple syrup.
  • Ensure each piece is well coated by tossing them gently in the syrup, then remove and set aside on a plate to cool.
