Ingredients
For the Loqmak:
๐ฅฃ 1 cup flour
๐ฝ 1 cup cornstarch
๐ผ 1/4 cup oil
๐ฅ 3 tablespoons yogurt
๐ฌ 1 tablespoon sugar
๐ 1 teaspoon yeast
๐ง 1/2 cup + 1/3 cup water
For the Simple Syrup:
๐ 8 cups sugar
๐ง 4 cups water
๐ 1 tablespoon lemon juice
๐บ 1 tablespoon orange blossom water (optional)
Instructions
1- Prepare the Dough:
- In a large mixing bowl, combine the flour, cornstarch, oil, yogurt, sugar, and yeast.
- Gradually add 1/2 cup of water, mixing until well combined and the batter is smooth. If necessary, add the additional 1/3 cup of water to achieve a pourable consistency.
- Cover the bowl with a damp cloth and let it rest for 20-30 minutes to allow the yeast to activate.
2- Prepare the Simple Syrup:
- In a medium saucepan, combine the sugar, water, lemon juice, and optional orange blossom water.
- Bring to a boil over medium heat, then reduce to a simmer and cook for 15-20 minutes, stirring occasionally, until it thickens slightly.
- Remove from heat and let it cool.
3- Fry the Loqmak:
- Heat a deep pan with sufficient oil over medium heat for frying.
- Once the oil is hot, use your fingers to squeeze small portions of the dough through your hand, cutting them with a spoon.
- Carefully drop them into the oil, frying in batches to avoid overcrowding, until they are golden brown and crisp on all sides.
- Remove them with a slotted spoon and let them drain briefly on a paper towel.
4- Coat with Syrup:
- While still hot, immediately dip the fried loqmak into the prepared simple syrup.
- Ensure each piece is well coated by tossing them gently in the syrup, then remove and set aside on a plate to cool.
