Instructions
1- Prepare the Cream Mixture:
- In a medium saucepan, combine 2 cups of milk, 1 cup of heavy whipping cream, 1/2 cup of sugar, and 3 tablespoons of corn starch. Mix well until the sugar and corn starch dissolve completely.
- Place the saucepan over medium-high heat and stir continuously until the mixture begins to thicken. Once thickened, remove from heat and stir in 1 tablespoon of vanilla extract. Set aside to cool slightly.
2- Prepare the Coffee Mixture:
- In a cup, combine 1 cup of hot water with 2 tablespoons of instant coffee. Stir until the coffee dissolves completely.
3- Layer the Trifle:
- In a serving dish, quickly dip each Lotus cookie into the coffee mixture and then layer them at the bottom of the dish. Follow with a layer of the prepared cream mixture.
- Repeat these layers, alternating soaked cookies and cream, until all the ingredients are used, ending with a layer of cream on top.
4- Prepare the Chocolate Topping:
- In a microwave-safe bowl, combine 1 cup of chocolate chips and 1/4 cup of milk. Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted and smooth.
