Ingredients
π« 1 cup black olives
π« 1 cup green olives
πΆοΈ 1/2 cup hot pickled peppers
π§ 2 cloves garlic, thinly sliced
πΏ 1/4 cup chopped fresh parsley
π§ 1 tsp salt
π 1 tbsp sumac
πΏ 1 tsp dried oregano
πΏ 1 tsp dried thyme
π Juice of 1 lemon
π« 1 cup olive oil
πΆ 2 tbsp white vinegar

Instructions
1- Combine the Olives:
β’ In a large mixing bowl, add black olives and green olives.
β’ Mix to combine.
2- Add Heat and Aromatics:
β’ Add the hot pickled peppers and sliced garlic.
β’ Toss gently to distribute evenly.
3- Add Herbs and Seasonings:
β’ Sprinkle in the chopped parsley, salt, sumac, oregano, and thyme.
β’ Mix to coat the olives well with herbs and spices.
4- Add Acid and Oil:
β’ Pour in the lemon juice and white vinegar.
β’ Stir to incorporate.
5- Finish with Olive Oil:
β’ Pour in the olive oil and toss everything together thoroughly.
β’ Let sit at room temperature for at least 1 hour.
6- Serve or Store:
β’ Serve immediately or refrigerate in an airtight container for up to one week.
