Instructions
1- Prepare the Chicken:
- Cut each chicken breast in half horizontally to create thinner cutlets.
2- Season:
- In a small bowl, mix 1 teaspoon salt, 1/2 teaspoon each of paprika, garlic powder, onion powder, black pepper, thyme, oregano, and 1/4 teaspoon cayenne pepper.
- Season both sides of the chicken with this spice mixture.
3- Sear the Chicken:
- Heat a large skillet over medium-high heat, add 3 tablespoons of olive oil and 1 tablespoon butter.
- Once hot, add the chicken and cook for about 4 minutes per side or until golden brown.
- Remove chicken and set aside on a plate.

- In the same skillet, add the chopped onion and minced garlic.
- Cook for about 1 minute until fragrant.

6- Add Cheese and Spinach:
- Incorporate 1 cup of grated Parmesan cheese into the sauce, stirring until melted and smooth.
- Add the spinach and cook until wilted.
7- Combine Chicken and Sauce:
- Reduce heat to medium-low.
- Return the chicken to the skillet, nestling it into the sauce.
- Cook for an additional 5 minutes or until the sauce thickens and coats the chicken thoroughly.
8- Serve:
- Sprinkle additional grated Parmesan cheese on top before serving.
