Ingredients

🍚 1/2 cup of jasmine rice, washed
πŸ’§ 3 cups of water

Instructions

1- Cook the Rice:

  • Place the washed jasmine rice in a large pot and add 3 cups of water.
  • Cook on high heat. Do not cover the pot to prevent foaming.
  • Allow the water to evaporate completely. Once evaporated, lower the heat, cover the pot, and cook for an additional 5 minutes until the rice is soft and mushy.

2- Prepare the Pudding Mixture:

  • Turn the heat back to medium and add the can of sweetened condensed milk to the cooked rice. Stir to combine.
  • Sprinkle in the sugar and mix well.

3- Thicken the Pudding:

  • In a separate bowl, mix the cornstarch with the milk until it’s smooth and no lumps remain.
  • Gradually pour the milk mixture into the rice while stirring continuously.
  • Continue stirring over medium-high heat until the pudding starts to thicken.

4- Flavor the Pudding:

  • Once thickened, add the vanilla extract and stir thoroughly to incorporate.

5- Caramelize the Top:

  • Transfer the rice pudding to oven-safe ramekins or a baking dish.
  • Preheat the broiler and place the dishes under the broiler until the tops turn golden brown and caramelized.

6- Cool and Serve:

  • Remove from the oven and allow them to cool completely in the fridge.
  • Once cold, garnish with pistachios or your favorite nuts before serving.
