Ingredients
π 1/2 cup of jasmine rice, washed
π§ 3 cups of water
π₯ 6 cups of milk
π₯« 1 14oz can of sweetened condensed milk
π¬ 1/4 cup of sugar
π½ 3 heaping tablespoons of cornstarch
π¦ 1 tablespoon of vanilla extract
Instructions
1- Cook the Rice:
- Place the washed jasmine rice in a large pot and add 3 cups of water.
- Cook on high heat. Do not cover the pot to prevent foaming.
- Allow the water to evaporate completely. Once evaporated, lower the heat, cover the pot, and cook for an additional 5 minutes until the rice is soft and mushy.
2- Prepare the Pudding Mixture:
- Turn the heat back to medium and add the can of sweetened condensed milk to the cooked rice. Stir to combine.
- Sprinkle in the sugar and mix well.
3- Thicken the Pudding:
- In a separate bowl, mix the cornstarch with the milk until itβs smooth and no lumps remain.
- Gradually pour the milk mixture into the rice while stirring continuously.
- Continue stirring over medium-high heat until the pudding starts to thicken.
4- Flavor the Pudding:
- Once thickened, add the vanilla extract and stir thoroughly to incorporate.
5- Caramelize the Top:
- Transfer the rice pudding to oven-safe ramekins or a baking dish.
- Preheat the broiler and place the dishes under the broiler until the tops turn golden brown and caramelized.
6- Cool and Serve:
- Remove from the oven and allow them to cool completely in the fridge.
- Once cold, garnish with pistachios or your favorite nuts before serving.
