Ingredients

🌶️ 1.5 pounds mini peppers or 3 large red peppers

🌿 Fresh basil, as much as you want
🥄 1 tablespoon drained capers
🍏 1 tablespoon apple cider vinegar
🧂 1/2 teaspoon salt, or to taste
⚫ 1/4 teaspoon black pepper
🌶️ 1/4 teaspoon chili flakes


Instructions

1- Prep the Peppers:

  • Preheat your oven on the broil setting at high.
  • Arrange the mini peppers or large red peppers on a baking sheet.
  • Roast the peppers under the broiler until charred on all sides. This should take about 8-10 minutes, turning them occasionally.

2- Steam and Peel:

  • Remove the peppers from the oven and place them in a heatproof bowl.
  • Cover the bowl with plastic wrap and allow them to sit for 15 minutes. This steaming process will help loosen the skins.
  • After 15 minutes, carefully peel off the skins (do not rinse under water as this will wash away the flavorful oils).
  • Cut off the stems, remove the seeds, and slice the peppers into strips.

3- Prepare the Dressing:

  • In a small bowl, whisk together the extra virgin olive oil, minced garlic, chopped basil, capers, apple cider vinegar, salt, black pepper, and chili flakes.

4- Assemble the Salad:

  • Toss the roasted pepper strips in the dressing until well coated.
