Indulge in these deliciously crunchy and nutty sesame seed bars, a delightful blend of sesame seeds, almonds, walnuts, and pistachios, sweetened with golden honey and sugar. Perfect as a healthy snack to boost your energy through the day, these bars are both nutritious and satisfying.

Ingredients

🌾 3 cups sesame seeds
🍏 1 cup unsalted almonds
🌰 1 cup walnuts
🟢 1/2 cup unsalted pistachios
🍯 3/4 cup honey
🍬 3/4 cup sugar
🥄 4 tablespoons tahini


Instructions

1- Prepare the Tahini Base:

  • Spread 2 tablespoons of tahini evenly on a cookie sheet.
  • Coat one side of a piece of parchment paper with the remaining 2 tablespoons of tahini.

2- Process and Toast:

  • In a food processor, finely chop the walnuts, almonds, and pistachios.
  • Heat a large skillet over medium-high heat and toast the sesame seeds for about 5 minutes, stirring constantly to prevent burning.
  • Add the chopped nuts to the skillet and continue to toast everything together for an additional 2 minutes. Remove from heat.

3- Create the Honey Mixture:

  • In a small pot, melt the sugar and honey together over medium heat. Stir until the mixture begins to bubble, then immediately remove from heat.

4- Combine Ingredients:

  • Pour the hot honey and sugar mixture over the sesame seeds and nuts. Quickly mix everything together thoroughly.

5- Form the Bars:

  • Transfer the mixture to the prepared cookie sheet. Place the parchment paper tahini-side down on top of the mixture.
  • Use a rolling pin to evenly flatten the mixture, ensuring uniform thickness.

6- Cool and Cut:

  • Allow the mixture to cool for about 10 to 15 minutes.
  • Once cooled, remove the parchment paper and cut into desired bar shapes or sizes.

7- Optional Garnish:

  • If desired, sprinkle some extra chopped pistachios on top before cooling for added texture and flavor.
