Shakshuka is a delightful Middle Eastern dish that combines rich flavors with a hint of spice, making it a breakfast favorite around the world. This version features vibrant cherry tomatoes and is perfect for a cozy brunch or a hearty breakfast. Serve it with warm pita bread for dipping and enjoy the perfect blend of spices and flavors.

Ingredients

🫒 1/4 cup olive oil
🧅 1 small onion, chopped
🌶️ 1 jalapeño, sliced
🍅 1 pint of cherry tomatoes
🧂 1/2 teaspoon salt
⚫ 1/2 teaspoon black pepper
🥚 4 eggs
🧂 Sprinkle some salt on top of the eggs
🌿 Fresh parsley for garnish
🥙 Pita bread for dipping


Instructions

1- Heat the Oil:

  • Place a skillet on high heat and add the olive oil.
  • Allow the oil to heat up until it is shimmering.

2- Sauté Aromatics:

  • Add the chopped onion and sliced jalapeño to the skillet.
  • Sauté them for a few minutes until the onion becomes translucent and the jalapeño releases its aroma.

3- Cook Tomatoes:

  • Add the cherry tomatoes, salt, and black pepper to the skillet.
  • Cover with a lid and let it cook for about 5 minutes to allow the tomatoes to soften and release their juices.

4- Smash and Simmer:

  • Gently smash the tomatoes with the back of a spoon or spatula to release more of their juices.

5- Add Eggs:

  • Crack the eggs on top of the tomato mixture.
  • Sprinkle a bit of salt over the eggs.
  • Cover the skillet again and continue cooking until the eggs are cooked to your desired doneness.

6- Garnish and Serve:

  • Once the eggs are ready, remove from heat, garnish with fresh parsley, and serve immediately with warm pita bread for dipping.
