Ingredients
๐ 2 chicken breasts, diced very small
๐ฅ 2 tablespoons olive oil
๐ง 4 cloves of garlic, minced

1 large onion, chopped
๐ถ๏ธ 1 red bell pepper, diced
๐ถ๏ธ 1 jalapeรฑo, deseeded and chopped
๐ฟ 1 teaspoon coriander
๐ง 1 teaspoon onion powder
๐ง 1 teaspoon garlic powder
๐ฟ 1 teaspoon cumin
๐ถ๏ธ 1/2 tablespoon paprika
๐ถ๏ธ 1/2 tablespoon chili powder
๐ถ๏ธ 1/2 teaspoon chili flakes (or to taste)
๐ง 1 teaspoon salt
๐ฝ 1 cup of corn
๐ซ 1 can (15.5 oz) of black beans, drained
๐ฟ 1/2 cup chopped cilantro
๐ง 2 cups shredded cheddar cheese
๐ฅข 1 package spring roll wraps (or egg roll wraps)
๐ฅ 2 tablespoons flour mixed with โ
๐ง 3 to 4 tablespoons water (for sealing the rolls)
๐ฅ Oil for frying
Instructions
1- Prepare the Filling:
- In a large pan, heat the olive oil over medium-high heat.
- Add the diced chicken and cook for about 10 minutes, or until the chicken is fully cooked.
- Add the garlic, onion, red bell pepper, and jalapeรฑo to the pan. Sautรฉ for a few minutes until the vegetables soften.
- Season the mixture with coriander, onion powder, garlic powder, paprika, cumin, chili powder, and chili flakes. Mix well to combine all the flavors.
- Stir in the salt, corn, black beans, cilantro, and cheddar cheese. Continue mixing until everything is evenly distributed.
- Remove the pan from heat and let the mixture cool slightly.
2- Prepare the Rolls:
- Create a slurry by mixing the flour and water together to form a paste.
- Lay a spring roll wrap flat and place a couple of tablespoons of the filling in the center.
- Fold the bottom corner over the filling, tuck in the sides, and roll it up tightly.
- Use the flour slurry to seal the edge of the roll. Repeat with the remaining wraps and filling.
3- Fry the Rolls:
- In a deep skillet, heat oil for frying over medium heat.
- Once the oil is hot, carefully fry the spring rolls in batches until they are golden brown and crispy, about 3-5 minutes each.
- Remove from the oil and drain on paper towels.
