Ingredients

🫒 2 tablespoons olive oil
🧄 4 cloves garlic (minced)
🧅 1 large red or white onion (diced)
🥩 1 pound of ground beef
🍅 1 large tomato (diced)
🌮 3 tablespoons taco seasoning
🥢 1 package of egg roll wraps
🧀 2 cups Mozzarella cheese
💧 Water (to seal the egg rolls)
🥑 Avocado spray


Instructions

1- Prepare the Filling:

  • Heat 2 tablespoons of olive oil in a pan over medium heat.
  • Sauté the minced garlic and diced onion for about 5 minutes until the onion becomes translucent.
  • Add the ground beef to the pan and cook until browned, approximately 10 minutes.
  • Stir in the diced tomato and taco seasoning, cooking for an additional 5 minutes.
  • Remove the pan from heat and let the filling cool completely.

2- Assemble Egg Rolls:

  • Take an egg roll wrap and brush some water along its edges.
  • Place around 2 tablespoons of the beef filling in the center of the wrap.
  • Add a generous sprinkle of Mozzarella cheese on top of the filling.
  • Fold in the sides of the wrap and roll it up tightly, sealing the edges with water.
  • Repeat the process until all the filling is used.

3- Cook in Air Fryer:

  • Preheat the air fryer to 400°F (200°C).
  • Arrange the egg rolls in the air fryer basket, ensuring space between each for air circulation.
  • Spray the egg rolls with avocado cooking spray.
  • Air fry for 5 minutes, then flip the egg rolls and cook for an additional 4-5 minutes until golden and crispy.

4- Serve:

  • Remove from the air fryer and let them cool slightly before serving. Enjoy your crispy taco egg rolls with your favorite dipping sauce!
