Ingredients

For the Chicken Wraps:
🍗 4 boneless, skinless chicken thighs
🧄 1 tablespoon garlic paste
🧄 1 tablespoon ginger paste
🌶️ 1/2 teaspoon red chili flakes
🥄 1 teaspoon sesame oil
🥄 1 tablespoon rice vinegar
🍯 1 tablespoon honey
🧂 2 tablespoons soy sauce
🫒 2 tablespoons olive oil
🥬 Lettuce leaves
🥕 Shredded carrots
🥒 Cucumber, thinly sliced
🍜 Rice noodles, cooked
🌿 Sesame seeds for garnish

For the Peanut Sauce:
🥜 2 tablespoons smooth peanut butter
🧂 1 tablespoon soy sauce
🌶️ 2 tablespoons sweet chili sauce
🥄 1 teaspoon rice vinegar
🍋 1 teaspoon lime juice
🌶️ 1/2 teaspoon chili flakes
💧 3 tablespoons water

Instructions

1- Marinate the Chicken:

  • In a bowl, combine the garlic paste, ginger paste, red chili flakes, sesame oil, rice vinegar, honey, and soy sauce.
  • Add the chicken thighs, ensuring they're evenly coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for deeper flavor.

2- Cook the Chicken:

  • Heat olive oil in a nonstick skillet over high heat. Once hot, add the marinated chicken thighs.
  • Cook for about 5 minutes per side or until the chicken is thoroughly cooked and golden brown.
  • Remove from the pan and let it rest for 5 minutes before slicing.

3- Prepare the Noodles and Vegetables:

  • While the chicken is cooking, prepare your vegetables—shred the carrots and slice the cucumber.
  • Cook the rice noodles according to the package instructions.

4- Prepare the Peanut Sauce:

  • In a mixing bowl, combine peanut butter, soy sauce, sweet chili sauce, rice vinegar, lime juice, chili flakes, and water. Mix until smooth and well combined.

5- Assemble the Wraps:

  • Arrange the lettuce leaves on a platter.
  • Place a few slices of chicken on each leaf, then top with shredded carrots, cucumber, and rice noodles.
  • Drizzle with the peanut sauce and sprinkle with sesame seeds.
  • Serve immediately and enjoy this burst of flavors and textures!
