Ingredients

🫒 1/4 cup extra virgin olive oil

🌿 1 tablespoon roasted garlic and herb seasoning
🧂 1/2 tablespoon kosher salt


Instructions

1- Preheat your oven:

  • Preheat your oven to 400°F (200°C).

2- Prepare the Ingredients:

  • Clean the chicken thoroughly and pat dry.
  • Peel the potatoes and cut them into medium-sized cubes.
  • Chop the onion, mince the garlic, and chop the fresh dill.
  • Place the potatoes, onion, garlic, and dill in a large baking dish.

3- Make the Marinade:

  • In a bowl or mason jar, mix the chicken broth, lemon juice, extra virgin olive oil, spice blend, roasted garlic and herb seasoning, and kosher salt.
  • Stir or shake well until all ingredients are combined.

4- Marinate:

  • Pour the marinade over the chicken and vegetable mixture in the baking dish.
  • Mix thoroughly to ensure even coating.
  • Allow to marinate for at least 30 minutes, or overnight for a deeper flavor (note: if marinating overnight, only marinate the chicken, garlic, and dill to prevent the potatoes from discoloring).

5- Bake:

  • Place the baking dish in the preheated oven and bake for 1 hour and 20 minutes, basting the chicken every 30 minutes with the pan juices.

6- Serve:
