Ingredients
🍗 4 chicken leg quarters (or your preferred cut)
🥔 5 medium potatoes, cubed
🧅 1 large onion, chopped
🧄 10 cloves of garlic, minced
🌿 1 cup fresh dill, chopped
🍗 1 cup chicken broth or stock
🍋 1 cup fresh lemon juice
🫒 1/4 cup extra virgin olive oil
🌶️ 2 tablespoons kickin' chicken spice blend (or any chicken spice blend)
🌿 1 tablespoon roasted garlic and herb seasoning
🧂 1/2 tablespoon kosher salt
Instructions
1- Preheat your oven:
- Preheat your oven to 400°F (200°C).
2- Prepare the Ingredients:
- Clean the chicken thoroughly and pat dry.
- Peel the potatoes and cut them into medium-sized cubes.
- Chop the onion, mince the garlic, and chop the fresh dill.
- Place the potatoes, onion, garlic, and dill in a large baking dish.
3- Make the Marinade:
- In a bowl or mason jar, mix the chicken broth, lemon juice, extra virgin olive oil, spice blend, roasted garlic and herb seasoning, and kosher salt.
- Stir or shake well until all ingredients are combined.
4- Marinate:
- Pour the marinade over the chicken and vegetable mixture in the baking dish.
- Mix thoroughly to ensure even coating.
- Allow to marinate for at least 30 minutes, or overnight for a deeper flavor (note: if marinating overnight, only marinate the chicken, garlic, and dill to prevent the potatoes from discoloring).
5- Bake:
- Place the baking dish in the preheated oven and bake for 1 hour and 20 minutes, basting the chicken every 30 minutes with the pan juices.
6- Serve:
