Instructions

1- Prepare the Filling:

  • Heat the canola oil in a large skillet over medium-high heat.
  • Add the chopped onion and minced garlic, sautรฉing until they are soft and fragrant.
  • Add the ground beef to the skillet, cook and stir until it's browned.
  • Stir in the cayenne pepper, cumin, black pepper, paprika, oregano, and chicken bouillon, mixing well to combine all the flavors.
  • Add the peas, cooking until they are thawed and warm.
  • Finally, stir in the mozzarella cheese, mixing just until it is evenly distributed and melted. Remove the skillet from the heat and allow the filling to cool completely.

2- Assemble the Empanadas:

  • Preheat your frying oil in a pot over medium-high heat.
  • Take an empanada dough disc and flatten it slightly using your hands or a rolling pin.
  • Place a spoonful of the beef mixture in the center of the dough.
  • Fold the dough over the filling to form a half-moon shape, pressing the edges to seal. Use a fork to crimp the edges for a decorative seal.
  • Repeat this process until all empanadas are filled and sealed.

3- Fry the Empanadas:

  • Carefully add the assembled empanadas to the hot oil, frying about four at a time.
  • Cook each side for about 2-3 minutes or until golden brown.
  • Remove from the oil and place on a paper towel-lined plate to drain the excess oil.
