Ingredients

🧅 1 large onion, chopped
🫒 1 tablespoon olive oil
🧈 2 tablespoons butter
🧂 1/2 teaspoon salt
🥩 1 pound ground beef
🧄 1 teaspoon garlic powder
🧂 1 teaspoon salt
🌶️ 1/2 teaspoon black pepper
🌶️ 1/2 teaspoon chili flakes
🥫 2 tablespoons Worcestershire sauce
🟡 2 tablespoons yellow mustard
🥑 Avocado cooking spray
🌯 8 flour tortillas
🧀 3 cups mozzarella cheese (or your favorite cheese)

For the Dipping Sauce:
🥄 1/2 cup mayonnaise
🍅 2 tablespoons ketchup
🟡 1 tablespoon yellow mustard
🧅 1 tablespoon finely chopped onions
🥒 1 tablespoon finely chopped pickles
🥒 2 tablespoons of pickle juice

Instructions

1- Caramelize the Onions:

  • In a skillet over medium heat, add olive oil and butter. Once the butter has melted, add the chopped onions and sprinkle with salt.
  • Cook, stirring occasionally, until the onions are caramelized and golden. Set aside.

2- Prepare the Ground Beef:

  • In another skillet over high heat, add the ground beef.
  • Season it with garlic powder, salt, black pepper, and chili flakes.
  • Stir in the Worcestershire sauce and mustard.
  • Cook the mixture thoroughly for about 10 minutes until the beef is browned and cooked through.

3- Assemble the Quesadillas:

  • Lightly spray a nonstick skillet with avocado cooking spray and heat over medium to low heat.
  • Place a flour tortilla in the skillet, and on one half, sprinkle a layer of cheese.
  • Add a portion of the beef mixture and caramelized onions, followed by another layer of cheese.
  • Fold the tortilla and cook on both sides until both are crispy and golden brown.

4- Prepare the Dipping Sauce:

  • In a bowl, combine mayonnaise, ketchup, mustard, chopped onions, pickles, and pickle juice.
  • Mix thoroughly until well combined.

5- Serve the Quesadillas:

  • Once the quesadillas are cooked, cut them into triangles.
  • Serve hot with the tangy dipping sauce on the side.
  • Enjoy your meal!
