Ingredients
Chicken Chilifry:
π 2 chicken breasts, diced small
π« 3 tablespoons olive oil

π§ 3 cloves garlic, sliced or minced
π« 1 bell pepper (any color)

3 small tomatoes, sliced
π§ 1 teaspoon chicken bouillon

π§ 1/2 teaspoon salt
πΏ 1/2 teaspoon cumin
πΆοΈ 1/2 teaspoon black pepper
πΆοΈ 1/4 teaspoon cayenne pepper

1/2 cup tomato sauce
π§ 1/2 cup water
πΏ 1 cup parsley, chopped
Orzo Rice Pilaf:
π« 1/4 cup olive oil
π 1 cup Orzo
π 2 cups basmati rice, washed and soaked
π§ 1 tablespoon salt
π§ 4 cups hot water
Instructions
1- Prepare the Chicken Chilifry:
- Heat a pan over medium-high heat and add olive oil.
- Add sliced onion and sautΓ© for a few minutes until translucent.
- Stir in the diced chicken and cook for approximately 7 minutes.
- Incorporate garlic and bell pepper, cooking for a couple of minutes.
- Add the sliced tomatoes, chicken bouillon, paprika, salt, cumin, black pepper, and cayenne pepper. Stir well.
- Pour in tomato sauce and water, mixing thoroughly.
- Cover the pan and let it simmer on medium-low heat for 15 minutes.
- After simmering, turn off the heat and mix in chopped parsley. Set aside.
2- Prepare the Orzo Rice Pilaf:
- Rinse the basmati rice until the water runs clear and soak for 20 minutes. Strain.
- In a separate pan, heat olive oil over medium-high heat.
- Add orzo and toast until golden brown.
- Stir in the soaked basmati rice and salt, mixing evenly.
- Pour in hot water, giving it a quick stir.
- Cover the pan and let the water reduce.
- Once the water has reduced, turn the heat to low and continue cooking for 15-20 minutes until the rice is fluffy.
3- Serve:
- Once everything is cooked, serve the Chicken Chilifry alongside the Orzo Rice Pilaf.
- Garnish with additional parsley if desired, and enjoy your delicious meal!
