Ingredients
For the Chicken:
🐔 2 chicken breasts
🌿 Sazon seasoning (as desired)
🧂 Salt, to taste
🌶️ Black pepper, to taste
🌶️ Cayenne pepper, to taste
🌶️ Paprika, to taste
🧈 1 tablespoon butter
🫒 1 teaspoon olive oil
For the Pasta:
🍝 12 oz fettuccine pasta
🧂 Salt, for pasta water
🫒 A dash of olive oil, for pasta water
For the Alfredo Sauce:
🧈 1/2 stick of butter
🧄 3 cloves garlic, minced
🌾 3 tablespoons all-purpose flour
🥛 2 cups milk
🥛 1 cup heavy cream
🧀 1 cup parmesan cheese, grated
🧀 1/2 cup mozzarella cheese (optional)
🧂 Salt and pepper, to taste
For Garnish:
🍅 Diced tomatoes
🌿 Fresh parsley, chopped
Instructions
1- Prepare the Chicken:
- Cut each chicken breast into 3-4 fillets to ensure quick and even cooking.
- Season the fillets with sazon, salt, black pepper, cayenne, and paprika.
- In a large nonstick skillet, heat butter and olive oil over high heat.
- Add the seasoned chicken fillets and cook for about 4-5 minutes on each side, or until fully cooked and golden brown.
- Remove the chicken from the skillet, cover with foil, and set aside to rest.
2- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add a dash of olive oil to prevent sticking.
- Cook the fettuccine according to package instructions until al dente. Drain and set aside.
3- Make the Alfredo Sauce:
- In the same skillet used for the chicken, heat butter over medium heat until melted.
- Add the minced garlic and sauté for about a minute, being careful not to burn it.
- Stir in the flour and cook for another minute to form a roux.
- Gradually whisk in the milk and heavy cream, stirring continuously until the sauce begins to thicken.
- Stir in the parmesan cheese, and if desired, the mozzarella cheese, until melted and smooth.
- Season with salt and black pepper to taste.
4- Combine and Serve:
- Add the cooked fettuccine to the sauce and toss to coat evenly.
- Slice the rested chicken fillets and place them on top of the pasta.
- Garnish with diced tomatoes and fresh parsley.
