Ingredients
🥛 1 cup heavy cream
🧈 4 tablespoons unsalted butter
🧅 1 medium onion, diced
🥕 3 carrots, peeled and diced
🥬 3 celery stalks, diced
🧄 4 cloves garlic, minced
🥄 2 teaspoons chicken bouillon powder
🌶️ 1 teaspoon black pepper
🌶️ 1 teaspoon paprika
🧄 1 teaspoon garlic powder
🥣 1/4 cup flour
🐔 1 rotisserie chicken, diced small or shredded
🍗 4 cups chicken stock or broth
🌿 1 tablespoon fresh thyme
🥛 1 cup milk
🥔 1 package potato gnocchi (16 oz)
🧀 1/2 cup grated Parmesan cheese
🥬 1 pound spinach
Instructions
1- Sauté Vegetables:
- Melt the butter in a large Dutch oven or pot over medium heat. Add diced onions, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
2- Add Seasonings and Garlic:
- Stir in minced garlic, chicken bouillon powder, black pepper, paprika, and garlic powder. Cook for about 1 minute until fragrant.
3- Thicken the Base:
- Sprinkle in the flour and stir until fully combined. Cook for an additional 2 minutes, allowing the flour to turn a golden color.
4- Simmer the Soup:
- Add chicken stock and stir. Introduce fresh thyme and rotisserie chicken to the pot. Stir well, cover, and bring to a boil.
5- Incorporate Cream and Gnocchi:
- Pour in heavy cream and milk, then add gnocchi. Stir and let the soup boil gently for 5-10 minutes, stirring frequently, until the gnocchi floats to the top and the soup thickens.
6- Finish and Serve:
- Lower the heat and stir in grated Parmesan cheese and spinach. Let it simmer until the spinach wilts, about 1 minute. Serve hot with an extra sprinkle of Parmesan cheese on top. Enjoy your hearty, homemade soup!
