For the Chicken:
🐔 2 chicken breasts, cut into thin cutlets

🌶️ 1 teaspoon paprika
🌶️ 1 teaspoon cayenne pepper
🌶️ 1 teaspoon black pepper
🧂 1 teaspoon salt
🥚 2 eggs
💧 2 tablespoons water
🥣 1 cup all-purpose flour
🍞 1 cup panko breadcrumbs
🛢️ Canola oil for frying
For the Sauce:
🍅 2 tomatoes, chopped
🧅 1 small onion, chopped
🧄 3 cloves of garlic, minced
🍝 1 jar of marinara sauce
🌿 1 teaspoon oregano
🌿 1 teaspoon thyme
🌿 1 teaspoon savory
💦 1 cup water
For Serving:
🧀 1 cup mozzarella cheese slices
🍝 Spaghetti, cooked as per package instructions

Instructions
1- Prepare the Chicken:
- Place chicken breasts on a cutting board. Use a sharp knife to slice them into thin cutlets. This helps them cook quickly and evenly.
2- Prepare the Coating:
- In a bowl, whisk together the eggs and water.
- In another bowl, combine the panko breadcrumbs with garlic powder, cayenne pepper, paprika, black pepper, and salt.
- In a third bowl, add the flour and mix in the same spices: garlic powder, cayenne pepper, paprika, black pepper, and salt.
3- Coat the Chicken:
- Heat a skillet over medium-high heat and add canola oil.
- Dip each chicken cutlet first in flour, then egg wash, and finally coat with breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure an even coating.
4- Fry the Chicken:
- Place the chicken cutlets in the hot skillet. Do not overcrowd the pan; cook 3 at a time if necessary.
- Fry each side for about 4-5 minutes or until golden brown and crispy. Remove and set aside.
5- Make the Sauce:

7- Add the Cheese:
- Place the mozzarella cheese slices over each chicken cutlet.
- Cover and let the cheese melt, then turn off the heat.
8- Prepare the Spaghetti:
- Cook spaghetti according to package instructions. Drain and set aside.
9- Serve:
- Serve the chicken Parmesan with cooked spaghetti, garlic cheese toast, and a side salad.
