Instructions
1- Prepare the Beef:
- Begin by placing the chopped beef in a pressure cooker with a sprinkle of salt and half a cup of water.
- Set the pressure cooker to the meat setting for 40 minutes to ensure the beef becomes tender.
2- Wash and Soak the Rice:
- While the beef is cooking, rinse the basmati rice thoroughly.
- Soak the rice in water to help the grains cook evenly.
3- Sauté Ingredients:
- Once the beef is ready, remove it from the pressure cooker.
- In a large pot, melt 2 tablespoons of butter with 2 tablespoons of oil over medium heat.
- Add the chopped onion and chickpeas, sautéing for 3 to 4 minutes until the onion becomes translucent.
4- Combine Ingredients:
- Drain the soaked rice and add it to the pot with the sautéed onions, chickpeas, and beef.
- Stir in the chicken bouillon, salt, cumin, cayenne pepper, and black pepper.
- Mix thoroughly to combine all the flavors.
5- Cook the Pilaf:
- Pour 3 cups of hot water over the rice mixture.
- Stir and taste the broth; adjust the seasoning with more salt or chicken flavoring if needed.
- Cover the pot and let it cook on medium heat until the water is absorbed.
6- Final Touches:
- Once the water is absorbed, lower the heat to very low.
- Cover the pot again and let the pilaf cook for an additional 10 to 15 minutes to ensure the rice is fully cooked.
