Ingredients
🥥 1 x 14oz bag of sweetened coconut flakes
🥚 3 egg whites
🧂 1/4 teaspoon salt
🍨 1 tablespoon vanilla extract
🥛 3/4 cup sweetened condensed milk
🍫 Melted chocolate (optional, for dipping)
Instructions
1- Preparation:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2- Egg Whites:
- Carefully separate the egg whites from the yolks, ensuring no yolk gets into the whites.
- In a mixing bowl, add the 3 egg whites and 1/4 teaspoon of salt.
- Whisk or beat the egg whites until stiff peaks form.
3- Coconut Mixture:
- In a separate large bowl, combine the entire bag of sweetened coconut flakes, 1 tablespoon of vanilla extract, and 3/4 cup of sweetened condensed milk.
- Mix until the ingredients are well combined.
4- Combine and Form:
- Gently fold the beaten egg whites into the coconut mixture. Be careful not to overmix; fold until just combined.
- Using a tablespoon or cookie scoop, form the mixture into 1-2 inch balls. Place them on the prepared baking sheet about an inch apart.
5- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
- Remove from the oven and allow to cool completely on a wire rack.
6- Chocolate Dip (Optional):
- Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip the bottoms of the cooled macaroons in the melted chocolate and place them back on parchment paper.
- Allow the chocolate to set by placing the macaroons in the refrigerator.
7- Serve:
- Once the chocolate has hardened, your coconut macaroons are ready to enjoy!
