🌶️ 1/2 teaspoon black pepper

Instructions
1- Prepare Chicken Cutlets:
- Slice chicken breasts horizontally to create thin cutlets.
- In a glass mixing bowl, whisk together eggs, salt, and pepper.
- Submerge chicken cutlets in the egg mixture.
- On a metal tray, mix breadcrumbs, Parmesan cheese, dried parsley, salt, and pepper.
- Coat each chicken cutlet in the breadcrumb mixture, ensuring a firm press.
- Heat oil in a non-stick frying pan over medium-high heat.
- Fry breaded chicken cutlets in hot oil until golden brown on both sides. Remove and drain on paper towels.
- Once slightly cooled, slice the fried chicken into strips.
2- Prepare Creamy Tomato Pasta:
- Boil a large pot of salted water. Add Barilla Penne pasta and cook until al dente. Reserve 1/2 cup of pasta water before draining.
- In a non-stick pan, melt butter and add olive oil.
- Sauté onions until translucent, then add garlic for another minute.
- Add Italian seasoning, chili flakes, black pepper, and salt. Cook to toast spices.
- Stir in tomato paste and cook until its color deepens.
- Pour in reserved pasta water, mix well, and reduce heat.
- Add heavy cream, stirring until a creamy sauce forms.
- Mix in Parmesan cheese until melted. Combine with drained pasta.
3- Assemble and Serve:
- Place chicken strips atop the creamy tomato pasta.
- Garnish with fresh parsley and extra Parmesan cheese.
- Serve immediately.
