Instructions

1- Prepare Chicken Cutlets:

  • Slice chicken breasts horizontally to create thin cutlets.
  • In a glass mixing bowl, whisk together eggs, salt, and pepper.
  • Submerge chicken cutlets in the egg mixture.
  • On a metal tray, mix breadcrumbs, Parmesan cheese, dried parsley, salt, and pepper.
  • Coat each chicken cutlet in the breadcrumb mixture, ensuring a firm press.
  • Heat oil in a non-stick frying pan over medium-high heat.
  • Fry breaded chicken cutlets in hot oil until golden brown on both sides. Remove and drain on paper towels.

3- Assemble and Serve:

  • Place chicken strips atop the creamy tomato pasta.
  • Garnish with fresh parsley and extra Parmesan cheese.
