Ingredients
🥚 1 large egg, room temperature
🧈 2 sticks unsalted butter, room temperature
🍬 1 and ¼ cups granulated sugar for dough
🍬 ¼ cup granulated sugar for rolling
🥄 1 teaspoon baking powder
🥄 ½ teaspoon baking soda
🧂 ½ teaspoon salt
🍨 2 teaspoons vanilla extract
🌾 2 and ½ cups all-purpose flour
🌿 1 teaspoon ground cinnamon
Instructions
1- Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper to prevent sticking.
2- Cream Butter and Sugar:
- In the bowl of a KitchenAid stand mixer fitted with the paddle attachment, cream the butter and 1 and ¼ cups of sugar on medium speed until the mixture becomes light and fluffy.
3- Mix Dough:
- Add the egg, vanilla extract, baking soda, baking powder, salt, and all-purpose flour all at once.
- Mix on low-medium speed until combined. Aim for a soft dough and avoid overmixing.
4- Combine Cinnamon and Sugar:
- In a small wooden bowl, combine the remaining ¼ cup of sugar and the ground cinnamon.
5- Portion and Coat Dough:
- Use a stainless steel cookie scoop to create dough balls, approximately 1½ inches in diameter.
- Roll each dough ball in the cinnamon-sugar mixture until fully coated.
6- Arrange on Baking Sheets:
- Place the dough balls on the prepared baking sheets, leaving enough space between each (2-3 inches).
7- Bake Cookies:
- Bake the cookies for 10–12 minutes, or until the edges are set and lightly golden. For a softer texture, bake for closer to 10 minutes.
8- Cool and Enjoy:
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy your homemade cinnamon sugar cookies with family and friends!
