Ingredients
For the Crepes:
🥚 4 eggs
🌾 1 cup flour
🍚 1/2 cup sugar
🧂 A pinch of salt
🍦 1 tablespoon vanilla extract
🧈 1/3 cup melted butter
🥛 1 and 1/4 cups milk
For the Filling:
🍫 Nutella (as needed)
🍓 Fresh strawberries, sliced
🍌 Bananas, sliced
🍦 Whipped cream (for topping)
🍬 Powdered sugar (for dusting)
Instructions
1- Prepare the Crepe Batter:
- In a large mixing bowl, whisk together the 4 eggs, 1 cup of flour, and 1/2 cup of sugar until well incorporated.
- Add a pinch of salt, 1 tablespoon of vanilla extract, 1/3 cup of melted butter, and 1 and 1/4 cups of milk to the mixture. Whisk until the batter is smooth and free of lumps. The batter should have a thin, pourable consistency. Let it rest for about 15-30 minutes in the refrigerator.
2- Cook the Crepes:
- Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a bit of butter.
- Pour approximately 1/4 cup of crepe batter into the pan, swirling it around to evenly coat the bottom. Cook for about 1-2 minutes, or until the edges start to crisp and the bottom is golden brown.
- Flip the crepe gently using a spatula and cook for another 1 minute on the opposite side.
- Repeat until all the batter is used, stacking the cooked crepes on a plate and covering them to keep warm.
3- Prepare the Filling:
- Spread a generous amount of Nutella over each crepe.
- Arrange a few slices of strawberries and bananas over the Nutella.
4- Assemble the Crepes:
- Fold the crepe into a triangle or roll it up.
- Top with a dollop of whipped cream and a sprinkle of powdered sugar before serving.
