Ingredients

For the Creamy Pesto Dressing:

๐ฟ 1/2 cup pesto
๐ 1/3 cup lemon juice
๐ซ 1/4 cup extra virgin olive oil
๐ถ๏ธ 1/4 teaspoon black pepper
๐ถ๏ธ 1/4 teaspoon chili flakes
๐ง 1/8 teaspoon salt
Instructions
1- Crisp the Gnocchi and Chickpeas:
- Place the gnocchi and chickpeas in a large bowl. Add the olive oil, lemon pepper, garlic powder, paprika, oregano, and salt. Toss everything well to coat.
- Transfer the seasoned gnocchi and chickpeas to the air fryer basket, ensuring an even layer. Air fry at 400ยฐF (200ยฐC) for 18-20 minutes, or until crispy and golden brown.
2- Prepare the Vegetables:
- While the gnocchi and chickpeas are air frying, prepare the vegetables. Chop, slice, and dice the cucumbers, red onion, celery, and bell pepper to your desired sizes.
3- Make the Creamy Pesto Dressing:
- In a mason jar, combine mayonnaise, pesto, lemon juice, olive oil, black pepper, chili flakes, and salt. Close the lid and shake the jar vigorously until the dressing is well combined and smooth.
