Dotlee is a delightful and sweet dessert that's perfect for Ramadan or any time you crave a delicious treat. With a crispy exterior and a soft interior, these fried dough bites are immersed in a fragrant simple syrup and topped with crushed pistachios for an extra crunch. Ingredients
Dotlee:
💧 2 cups water
🍚 1 and 1/2 cups of flour
🫒 3 tablespoons oil
🍬 1 tablespoon sugar
🥚 2 eggs
🍦 2 tablespoons vanilla extract
🥄 1 teaspoon baking powder
🧂 1/8 teaspoon salt
Simple Syrup:
🍬 4 cups sugar
💦 2 cups water
🍊 1 tablespoon orange blossom water
🍋 1 teaspoon lemon juice
Instructions
1- Prepare the Dough:
- In a medium-sized pot over high heat, combine 2 cups of water, 3 tablespoons of oil, 1 tablespoon of sugar, and 1/8 teaspoon of salt. Allow the mixture to come to a boil.
- Once boiling, gradually add 1 and 1/2 cups of flour, stirring continuously until the mixture forms a smooth dough. Remove the pot from heat.
- Transfer the dough to a mixing bowl and let it cool slightly.
2- Mix the Dough:
- Once cooled, add 2 eggs, 2 tablespoons of vanilla extract, and 1 teaspoon of baking powder to the dough.
- Using a mixer, blend the ingredients until you achieve a smooth and homogenous dough.
3- Prepare for Frying:
- Transfer the dough into a piping bag fitted with a star tip.
- Heat about 3 cups of oil in a pot over medium-high heat until it reaches frying temperature.
4- Fry the Dotlee:
- Carefully pipe 1 to 2-inch sections of dough into the hot oil, maintaining a safe distance to avoid splashes.
- Fry the dough pieces until they turn golden brown, then remove them from the oil and drain excess oil on paper towels.
5- Coat in Simple Syrup:
- Meanwhile, prepare the simple syrup by combining 4 cups of sugar, 2 cups of water, 1 tablespoon of orange blossom water, and 1 teaspoon of lemon juice in a pot.
- Bring the syrup mixture to a gentle simmer until the sugar fully dissolves. Let the syrup cool.
- Submerge the fried Dotlee into the cooled simple syrup, ensuring they are thoroughly coated.
6- Serve:
- Arrange the syrup-coated Dotlee on a serving platter and garnish with crushed pistachios if desired. Enjoy!
