Fried Kotalks, also known as Kubba, are delightful Middle Eastern treats made from a flavorful combination of bulgur and boiled potatoes, stuffed with a seasoned beef mixture. They are easy to prepare and incredibly delicious, making them perfect as either a sophisticated appetizer or a hearty meal alongside your favorite salad or soup. Pair them with lentil soup for a truly comforting dining experience.

Ingredients

Filling:
🥩 2 pounds ground beef
🧅 3 onions, finely chopped
🧂 1 tablespoon salt
🍛 1/2 tablespoon curry powder
🌶️ 1 teaspoon black pepper
🌿 1 teaspoon cumin
🌶️ 1/2 teaspoon chili flakes
🌿 1 cup parsley, finely chopped

Dough:
🌾 2 cups bulgur #1
💧 1 cup warm water
🥔 4 medium boiled potatoes, mashed
🍞 1/4 cup flour
🧂 1 tablespoon salt
🍅 2 tablespoons pepper paste or tomato paste
🧴 Oil for dipping hands
🧴 Oil for frying
💧 Additional water as needed for kneading


Instructions

1- Prepare the Filling:

  • In a skillet over medium heat, brown the ground beef until fully cooked.
  • Add the chopped onions, salt, curry powder, black pepper, cumin, and chili flakes. Stir well to combine.
  • Cook the mixture until the onions are soft and fragrant.
  • Stir in the chopped parsley and combine well.
  • Remove from heat and allow the filling to cool completely.

2- Prepare the Dough:

  • In a large bowl, combine the bulgur and warm water. Let it sit for 10 minutes until the bulgur absorbs the water and becomes soft.
  • Add the mashed potatoes, flour, salt, and pepper paste (or tomato paste) to the softened bulgur. Mix thoroughly to form a dough.
  • If the dough is too sticky, dip your hands in oil or water to facilitate the kneading.

3- Shape and Fill the Kotalks:

  • Take a small portion of the dough and shape it into a ball, about the size of a golf ball.
  • Flatten the ball in your palm to create a small patty.
  • Place a spoonful of the beef filling in the center of the patty.
  • Gently mold the dough around the filling, ensuring the mixture is completely enclosed.
  • Repeat the process until all the dough and filling are used.

4- Fry the Kotalks:

  • Heat oil in a deep pan to about 350°F (175°C).
  • Carefully place the kotalks into the hot oil, a few at a time, to avoid overcrowding.
  • Fry until golden brown and crispy, about 5 minutes on each side.
  • Remove from the oil and place on paper towels to drain excess oil.
