Ingredients

🥔 3 pounds baby potatoes
🥕 6 carrots
🧂 1 tablespoon salt
🥄 1 tablespoon baking soda
🫒 1/2 cup olive oil
🧂 1/2 teaspoon salt
🌶️ 1/2 teaspoon black pepper
🌶️ 1/2 teaspoon paprika

Garlic Herb Butter Sauce:
🌿 3 sprigs fresh thyme
🌿 1 to 2 sprigs rosemary
🌿 A handful of parsley
🧈 5 tablespoons unsalted butter
🧄 4 cloves garlic
🍋 1 tablespoon lemon pepper
🌿 Parsley for garnish


Instructions

1- Prepare the Vegetables:

  • Cut the baby potatoes in half and the carrots into large chunks.
  • Place them in a pot filled with cold water, ensuring the water covers the potatoes and carrots. Add 1 tablespoon salt and 1 tablespoon baking soda.
  • Boil for 15-20 minutes until slightly tender.

2- Preheat the Oven:

  • Set your oven to 400°F (200°C).

3- Season and Toss:

  • Drain the cooked potatoes and carrots, then transfer them to a large bowl.
  • Drizzle with 1/2 cup olive oil, and season with 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon paprika. Toss well to coat evenly.

4- Roast:

  • Spread the seasoned potatoes and carrots on a sheet pan in a single layer.
  • Roast in the oven for 45-50 minutes, stirring halfway through, until golden and browned.

5- Prepare the Garlic Herb Butter Sauce:

  • Finely chop the thyme, rosemary, parsley, and garlic.
  • In a small pan over medium heat, melt 5 tablespoons butter. Add the garlic, herbs, and 1 tablespoon lemon pepper, cooking for about one minute. Avoid letting the garlic and herbs burn.

6- Combine and Serve:

  • Once the potatoes and carrots are roasted to a golden brown, remove them from the oven and transfer to a large bowl.
  • Drizzle the garlic herb butter sauce over the top and toss to ensure each piece is well coated.
  • Garnish with fresh parsley before serving.
